Or: Cut in thin slices like onion rings, from the top stalks, all the way down to the bottom. If you slice thinly, you cut all the strings (its stringy like celery and in the same way) and you can eat all of it. Add to soups, or saute like onion rings (can cook both together), or - if you slice with a mandolin, you can eat raw in a salad (or as a salad). Bit of salt will help limpen it. The core tastes good, and i just eat it raw. So. Treat like onions or like celery. If you cant stand the strings, you should destring it as you would celery.

Don't throw out the fennel tops! Just chop them finely, and throw them in the dish as well. They are nice and crispy.
