Anti-inflammatory soup!🍲🥕🍅🧅🌶️🧄

Ingredients (8 servings)
On the baking tray:
6 big Tomatoes
1 big Carrot
2 Red onions
3 cups (710 ml) chopped Pumpkin
1 Garlic bulb
1 chilli
Fresh Rosemary
1 tbsp olive oil

Other ingredients:
400g white beans of choice or chickpeas
2 cups (480 ml) plant milk
2 cups (480 ml) water
3 tbsp vegetable broth powder
1 tsp garlic powder
salt & pepper to taste 

Instructions: 
1. Set your oven to 200C/ 390F. 
2. Roughly chop up all ingredients. Chop the garlic bulb in half. 
3. Place all ingredients on a baking tray covered with parchment paper and bake for 45 min.
4. When the veggies are done add them to a saucepan along with the rest of the ingredients and blend until smooth. Add salt and pepper to taste, enjoy with grilled cheese!
