I called King Arthur with a baking question a while back and in the course of our conversation, the KA baker emphasized strongly, the use of a scale and NOT measuring cups. I'm very happy that KA baker did that ... made a huge difference!!!

mdhiker, not all flours weigh the same. You can find a great chart for weight conversions on our website (at the bottom of the Recipes page). It lists the weights for several types of flours as well as many other common ingredients.

Small correction: the Measuring Flour page does mention - in passing - that a cup is 4.25 oz. The gist of the page, however, remains that flour measuring is done in cups.

My mother taught me to measure flour by first "fluffing it", then scooping it and then lightly using the flat edge of a knife to level it off. We didn't use scales in our kitchens back then. I use the fluff method and sometimes use the scale, which I now have in my kitchen. Regardless of the method used, the amount of flour needs to be accurate.

why not just use a scale and rid yourself of the mess that are cups.

I was taught by a professional baker to sift the flour. Measure 1 cup of flour and then sift it. You will have extra flour left over. Measure the sifted flour and use 1 cup of that. You will get a lighter product, cake, etc..

I measure my dry ingredients into a coffee filter. Uses up all of my old, unused filters that then go into the compost bucket.

I tried making my first no knead bread yesterday and it was awful. I'm guessing it was because I measured the flour incorrectly. Is it best to get a scale and if so, what do you suggest? I would be an occasional baker. Thank you.

Just use the scale. Unless gravity does something WEIRD, it will be right.

KA should REALLY make a concerted effort to wean the US public off of antiquated cups/volumes. Your very own Head Baker says cups aren't trustworthy measures: see Hamelman's "Bread", page four: "Step One: Scaling".

Your web page "Measuring Flour" doesn't even hint at weighing. It's like you're afraid of scaring the public. Why not explain why weighing is better (bonus: include link to your scales) THEN show volume measuring?

The King *should* be leading but isn't. :(
