<< Philadelphian. Looks good. Needs an Amoroso roll (which might be hard to get outside of Philly - I don't know) and while American works, Provolone is closer to classic.

you should consider semi freezing the beef. easier to cut much thinner slithers. also what everyone else said in the comments. different cheese different bread etc

My guy, you pour the cheese on the steak while it's on the grill, slap the bun on top of that, slide a big spatula under it, lift it, flip it, close it, wrap it. Rest, then eat.

NOPE! Not a Philly cheesesteak. I'm sure it's delicious but it is not a cheesesteak!
Edit: Oh you're in Australia? OK then might be as close as you can get to it. Slice that steak very thin, like using a deli slicer almost then you want to fry up onions and mushrooms in a bit of oil not butter. Then drop that steak into the same oil and it moving. Add onions & mushrooms back into the pan & incorporate it all together. Form into long shape to fit roll. Put American cheese or provolone cheese slices right on top of the meat (don't bother making a cheese sauce.) Use a really good italian roll, slice open, lie it on top of the meat, open/cut side down, slide spatula underneath the length of it & flip it over. Add ketchup to the meat & enjoy!
