For all of you saying "Because Windu crushed his lungs" READ THIS, because I'm tired of replying to you. The 2003 Clone Wars exists essentially on a separate, non-Canon timeline to the 2008 Clone Wars and Revenge of the Sith which are both Canon and from GL himself. What happened in the 2003 show has absolutely no influence over the 2008 show and ROTS. That's the part you're not understanding.
This video is explaining Lucas' behind the scenes decision to not have Grievous behave as he did in the 2003 series in both Revenge of the Sith and the 2008 Clone Wars. Windu crushing his lungs was an attempt to explain this in medium at the time, but isn't relevant here since the 2008 Clone Wars replaces the 2003 Clone Wars entirely, and we see that Grievous is already cowardly and already coughs despite never having his lungs crushed.

One thing I missed right up until I rewatched recently is that his ribcage ends up being crushed by Windu right at the end of the Battle of Coruscant, so he's fleeing because his organs were all crushed only 20 minutes earlier, and he's still reeling from his injuries by the end of the film.

"I was trained in your jedi arts by count dooku" actually seems to have some weight behind it with the 2003 version

There’s a great scene where Dooku is not only sparring with Grievous, but also teaching him the psychology behind defeating Jedi.
It’s also worthy to note that Dooku appears to barely break a sweat when duelling Grievous- showing just how good Dooku’s swordsmanship was.

I honestly like a depiction of Grievous that combines the two.
He's a badass ruthless Jedi killer, but when he needs or wants to, he'll twirl his little nonexistent mustache and escape.

Also, keep in mind that most of the Jedi Grevouis fought in the T.V. Show were the top of their class or Jedi masters. In canon suplimental material, he still is a terrifying threat.

I love that the canon reason for Grevious to be able to fight a force weilder is that he's so scary and threatening that the Jedi can't focus hard enough to use the force

I recall hearing/reading somewhere that another reason was because Darth Vader is supposed to be the unstoppable jedi-killer and they wanted to ensure that particular title was "unchallenged, " so to speak. They wanted to make sure Grievous wouldn't overshadow Vader.

Of course, we've never gotten to see Darth Vader take on multiple jedi masters and crush them with ruthless efficiency, so I, quite frankly, feel cheated.

Also mace windu crushed his chest making him more cautious and giving him a merciless cough
