5 INGREDIENT Quinoa Power Bowl

Trying hard here to not default to cheesy goodness in every recipe. This one is great for lunches or dinner. Of course you can add some chicken or shrimp if you like to round things out. But that would be 6 ingredients and I don’t want to get in trouble over here. Lol.
1 cup quinoa, rinsed, add to pot with 1 3/4 cups water, bring to boil, turn down and cook, covered 15 min.
2 cups chopped greens (rapini, spinach etc) add to quinoa after it cooks for 15 min. Stir greens in, cook covered for another 5 min. Turn off heat and let quinoa and greens sit for 5.
150g enoki (or any other mushroom) - sauté in pan with oil
3 Tbsp chili crisp + 1 Tbsp white wine vinegar (mix together.
Assemble - quinoa and greens, top with mushrooms and drizzle with chili crisp and vinegar.
