I remember in an earlier version of Minecraft, villagers could smell emeralds and follow the sent to them I guess. That was fun to toy around with

I just keep placing and breaking their work bench in a line towards where I want them to go and they slowly follow

Fun fact : in pocket edition, or bedrock i think, if you put thek in a boat and then get a lead and use the lead on the boat and it will be easy to get them across and some other unleaded animals/creatures

If a villager has no profession, you can place and break a work block around 35 blocks away from the villager, and they walk towards it, as long as they aren’t trying to go somewhere else like a bed or another work block. Be sure to break the work block before they equip that profession then you can repeat the process.

You actually can lure villagers. Depending on the time of day they will go a bed or workstation if they don't already have one and you place one. Break it as they arrive and replace it a short distance away. Rinse and repeat.

Just make a trail of carrots/bread to somewhere and the villager will follow it.

You oculd also just push them into a boat and dig a canal, which is probably faster and more effective than having to gather and then lead a large group of mobs
