Ingredients 🛒
•5 zucchini (sliced about 1/3 inch to 1/2 inch thick)
•1/3 c chopped fresh basil leaves
•1/4 c chopped fresh Italian parsley
•2 c plain breadcrumbs
•6 large eggs
•4 c freshly shredded Sargento mozzarella cheese
•1 c + 2 tbsp grated Locatelli Pecorino Romano cheese
•2 tbsp BelGioioso mascarpone cheese
•32oz Polly-O Ricotta cheese
•1/2 tsp salt
•1/2 tsp ground black pepper
• 1/2 tsp dried parsley flakes
•Extra virgin olive oil (EVOO)
•1 jar Michaels of Brooklyn tomato sauce OR scroll back for my homemade tomato sauce recipe

Here’s what you do 🍅

🥚Start by beating 4 eggs in a bowl. Set aside.

🥣Next, in a medium bowl add 2 c plain breadcrumbs, 1/4 tsp salt, 1/4 tsp ground black pepper, 1/2 tsp dried parsley flakes & 2 tbsp freshly grated Locatelli Pecorino Romano cheese.

🥒 Slice 5 zucchini about 1/3 inch to 1/2 inch thick. Begin dipping sliced zucchini into beaten egg mixture & then directly into the breadcrumb mixture. Place onto a plate & repeat until all zucchini are breaded.

🔥Place a large frying pan on medium high heat. Add EVOO to the pan until it’s about 1/4 inch in height (so oil completely covers the entire bottom of the pan & is 1/4 inch high). Let the oil heat up for about 2-3 mins then drop in the breaded zucchini by placing it away from you to avoid oil from splashing.

⏰Fry breaded zucchini in EVOO for 4 mins on each side. So 8 mins total. Remove zucchini from oil & place on paper towel lined baking sheet to absorb some oil from it. Repeat until all zucchini are fried.

🧀 In a large bowl, add in 32oz Polly-O Ricotta cheese, 2 c shredded Sargento mozzarella cheese, 1 c grated Locatelli Pecorino Romano cheese, 2 tbsp BelGioioso mascarpone cheese, 2 large eggs, 1/4 tsp salt, 1/4 tsp black pepper, 1/3 c chopped fresh basil leaves & 1/4 c chopped fresh Italian parsley. Combine together with a spoon.

👷🏽‍♀️ Build your lasagna in a large glass baking dish by dropping a scoop of red sauce in first, then fried zucchini, followed by about 7 tbsp cheese mixture, more fried zucchini, more cheese mixture, cover completely with red sauce, & finish with 2 c mozz on top.

⏰ Cover with aluminum foil. Bake at 350*F for 30mins. Remove foil from top. Bake for another 5mins with no foil.
