I'm still confused on how to actually dry age a duck

I had rotisserie Peking/Aylesbury duck that had been dry aged for a number of days, it was amazing. The chef mentioned that the ducks had been rubbed with spices then wrapped in cheesecloth. Do you know why he would have done that? Also should you salt the ducks while ageing them?

Do you keep the ducks at room temp while they drain/dry?  Or do you keep in fridge while it drains away?

So what is the best way to pluck those ducks and geese before dry aging them? That seems like the hardest part if not breasting them out like so many do.

Dry age, brine, and then medium rare. Sounds perfect. How long should I dry age the duck?

Can we put the duck into the freezer after dry ageing and eat it another day after de-icing, or should we eat it immediately after dry ageing? Thanks for the video chef!

Today I just butchered one of my pekin ducks, I’m not sure if it was Sweet or Sour i cant tell em apart anymore...
Anyways, it’s all cleaned and plucked and sitting on its back in the fridge. This duck didn’t smell fishy and didnt seem as oily as a wild duck, it’s got huge breast meats on it too but it’s never flown and them 2 pekin ducks barely ever even flap their wings or walk, lazy and hungry describes them best... plan is to rest in fridge till Christmas eve(3days) then brine that night and smoke all day Christmas Day for dinner :)

This video should be titled "why dry aging is important" because it does NOT tell a novice like me how to dry age a duck.

Literally all he says he did is cut the backs out? Also dry aging is the process of removing water, not blood.

um. you didnt tell us HOW.. this video should have been called WHY.. where is the "how to" ?

Dry aging is disgusting. Just don't eat things from "the bottom of a muddy slough".
