Spice Blend:
1/4 tsp. Ground Cardamom
1/4 tsp. Ground Cumin
1/4 tsp. Ground Clove
1/2 tsp. Fennel Powder
1/2 tsp. Ground Cinnamon
1/2 tsp. Garlic Powder
1/2 tsp. Cracked pepper
3/4 tsp. Salt

It is better to hang the Duck in your fridge but, I saw that putting it on a wire rack worked. Make sure if you are using the wire rack method that there is enough air circulation around the whole Duck. It is also very important to use clean and sanitary kitchen practices (especially important for dry aging).

For Cooking the Duck, roast it to about 165 degrees Fahrenheit, or to your desired temperature. To get the skin super crispy I turned my oven up to 450 degrees Fahrenheit. To check the internal temperature of the Duck I would recommend using a meat thermometer.
