I´ll add an unusual one (not even all Italian know this): if in Trieste, try the "piato de caldaia" (caldaia dish), which is a typical boiled meat dish. In other regions there´s boiled meat, but I can tell you this is different. And "cotto in crosta", which is ham cooked in the oven with a bread crust covering it: it´s delicious.
