Favorite lentil curry is so simple yet soooo delicious! It’s packed with veggies, protein & will keep you warm and full for hoursss😮💨🫶
INGREDIENTS:
2 tbsp olive oil
1 small red onion, chopped
1 sweet potato, peeled and cubed
2 garlic cloves, minced
1 tbsp fresh ginger, peeled and grated
1 tsp ground turmeric
1 tsp red pepper flakes
1 tbsp Thai red curry paste
1 cup red lentils, rinsed
4 cups water
Salt & pepper to taste
1 can full-fat coconut milk
2 cups spinach
½ lime, juiced
Fresh cilantro leaves
Bread to dip
INSTRUCTIONS:
Heat olive oil in a large pot over medium high heat.
Sauté onions and sweet potatoes for a couple of minutes until golden.
Add garlic, ginger, spices and curry paste and sauté.
Add lentils, water, salt & pepper, bring to a boil and cook for 15 more minutes.
Add coconut milk and cook for additional 15 minutes.
Turn off the heat, add spinach, lime zest & juice. Mix well.
Serve with naan / your fave bread and top with fresh cilantro. Enjoy!
