Knowing spam has a salty flavor I think that letting it caramelize in sugar and sriracha would be so good.

my mother is Vietnamese, and she uses “gio” (pronounced “yaw”) instead of spam. gio is basically just Vietnamese spam that’s a little less salty so if ur looking for an alternative, try this if you can find it!

The term CARAMELIZE is to cook the sugar in low heat for a long time. Until is about the color of Caramel, therefore the name.

Im amateur but im studying cheff so here some tips:
• I think your temperature was a little too high thats why you have some black areas.
•Turn the heat to hig the first 15-25 seconds with a hig temperature and quickly turn it back really low. This will speed up the process and help the crystals from the sugar to caramelize a little better.
•In this case you are working with a really salty meat so next time a little more sugar(you mention it in the video and I agree 100%).MORE jeje
•Try chopping the meat into uniforms cubes next time. Medium to small cube. This also help it to taste a little better.

Lately I've been preparing my spam like this:
I get the spam crispy in the pan, while it's heating up I mix together 2 tbsp of soy sauce, 2 tbsp honey, 1 tbsp mirin, and one tablespoon gochujang pepper paste. Once it's crispy I turn it off and throw the sauce into the pan and let the residual heat cook off the alcohol from the mirin and cook the sugars in the honey so that the sauce is thick. Really good in rice balls <3

Okay but spam slaps. The can, the smell and the way it looks is truly disgusting. My grandparents used to eat it all the time and I would look at the cans on the shelf in disgust. But one day I tried it pan fried and it was so good. Definitely not something I would eat everyday but definitely once in a while.

note for those who use oil when frying spam : you actually don't need oil because it only makes it saltier than it already is and it is dangerous for those with high blood pressure or other medical issues
