Rina creates one of her signature dishes, Brasato al Barolo, a Piedmontese classic, braised beef marinated with vegetables, spices and red wine and her secret ingredients. Although the name calls for Barolo, we prefer to use a good Nebbiolo and save the Barolo for drinking.
