Thank you! We butcher our yearly hogs and beef in a week and I've always fed the livers to the dogs, determined to feed it to us this time. So nice to see the proper cutting method, I've been doing it wrong.

I forgot to buy onions to go with my liver so used stuffing mix. I layered liver, bacon then dry stuffing and lastly made up enough Oxo gravy to cover it. Then I put casserole cover on dish and cooked in oven. It must have been good as there was none left.
