That works because English is a stress-timed language. We speak stressed syllables in a regular time (the beats), and shorten unstressed syllables to fit within them. The most common English pattern is the iamb (unstressed-stressed): "The DOOR is CLOSED." But often we squeeze two or three unstressed syllables into the space: "The SWING of the DOOR. The HAN-dle of the DOOR." The opposite is syllable-timed languages like Italian, where both stressed and unstressed syllables take the same time and form the beat. You can't squeeze extra syllables into them. Stress-timed languages are associated with vowel reduction, where unstressed syllables often lose their distinctive sounds (the u in focus, "Attention, my sir!"). Syllable-timed languages generally don't have vowel reduction: unstressed vowels are as distinctive as stressed vowels. ("Attenzione, il mio signore!") From this we can extrapolate that your English rhythm example works because of stress timing and secondarily vowel reduction.
