Blueberry Lemon Pavlova recipe 🍋 the perfect dessert 🫠

When I think of a ✨perfect✨ dessert, it’s got to check all the boxes:

- Hits all the right notes: creamy, rich, bright, tangy, sweet...
- Great variety of textures
- Quick to make
- Simple components
- Pretty to look at 😊

And Pavlova is just about as perfect as they come ⚡️

Named after ballerina Anna Pavlova, this version is made up of a crisp baked meringue with a marshmallowy center, rich whipped cream, lemon curd and a fresh burst of blueberries... it just has everything!

If you haven’t tried making it (which can be done in pretty much no time at all), you’re overdue!

Lemon Blueberry Pavlova
Ingredients:
3 egg whites
3/4 cup granulated sugar
1 tsp. lemon juice
2 tsp. cornstarch
1/4 tsp. Kosher salt
1 pint fresh blueberries
Sugar, to taste
Lemon juice, to taste
3/4 cup lemon curd (storebought or homemade)
Heavy cream, whipped to medium peaks
Optional: 1 lemon, zested

Method:
1. Preheat oven to 250°F. Line a standard baking sheet with parchment paper; set aside.
2. Whip egg whites until frothy. Slowly add sugar while whipping on medium speed until all has been added. Continue to beat to medium peaks (the meringue will hold its shape and look like a hook coming off the whisk when lifted).
3. Add lemon juice, cornstarch and salt and continue to beat for about 1 minute to stiff peaks.
4. Use a large scoop to portion 6 mounds onto the prepared baking sheet, spacing at least a few inches apart. Use a spoon to create a well in the center of each.
5. Bake for 1 hour and 15 minutes until firm to the touch and the meringues lift cleanly off the baking sheet. They should be light in color. Turn off the oven and leave meringues inside for an additional hour.
6. Heat blueberries, a sprinkle of sugar and splash of lemon juice in a small pot over medium heat, stirring, until blueberries begin to burst and release their juices. Taste and add additional sugar/lemon as desired. Set aside to cool.
7. Top meringues with a dollop of lemon curd, whipped cream, and blueberries. Top with lemon zest and serve immediately.
