RECIPE SERVES 8

2 cups samp
2 cups sugar beans
Cold water

Oil
2 onions
2 carrots
1 tsp cumin seeds
1 Tbsp mild curry powder
1 Tbsp garam masala
2 Tbsp crushed garlic & ginger
1 tsp paprika
1 tsp turmeric
1.5kg meaty beef bones
1 Tbsp garlic pepper seasoning
1 Tbsp barbecue seasoning
2 beef stock cubes
1 can tomatoes
2 cups water

NOTES:
*If you need to add more liquid during cooking, please add more beef stock not water. Dissolve 1 cube of stock in 1 cup boiling water.

*I used a pressure cooker to cook the samp and beans separately. Cooked for 30 minutes, then left the samp INSIDE the pressure cooker without opening the lid for another 30 minutes. It was perfectly cooked

*You can soak the samp and beans in cold water overnight. Then cook it together with the meaty bones over low heat. You would need more stock to properly cook the samp
