I'm actually in the process of restoring an old 10ft jon boat to make into a take down sailing catamaran and I'm planning on using your method to make that happen. Might upgrade to a 2x6 due to increased mass but I'm hoping to make a very small and stable sailer to try and learn sailing.

I would use a bungee like surfboard riders have attached to their ankle to keep the boat secure.

I think it gets better by the minute Brian. Not sure about the pool noodle. Could you get the same foam Mike flat that would fit between the ribs of the canoe? I'm seriously thinking about one or even two of these canoes now. As a system it shows for every aspect that i enjoy about been on the water. Paddling, sailing, trolling motor. What's not to like? Awesome thought process, with aircraft it's known as KISS, keep it simple stupid. What you don't have can't cause problems, !
