Nick's Lemonade

Ingredients:

- juice and zest of 5 lemons
- 200g (about 1 cup) sugar

Method:

1. In a saucepan, combine the sugar, 240ml (about 1 cup) of water, and the lemon zest. Gently simmer over low heat until the sugar has completely dissolved. Be careful not to boil it.
2. Let the sugar syrup cool down. Then, in a large pitcher, combine the cooled syrup, lemon juice, and 750ml (about 3 cups) of water. Stir well.
3. Serve the lemonade over ice. It's now ready to be enjoyed!

Honestly Andy, I’m sure your lemonade is delicious, but if you search up Chef John’s recipe for state fair lemonade, you won’t be disappointed. It is, for me the best one I’ve ever tasted, because he macerates the lemon zest with sugar overnight, (oleo saccharum) and uses that and the juice as a base for his lemonade. It’s life changingly delicious.
