SPANISH SEAFOOD PAELLA

Ingredients:

- Mussels
- Prawns
- Clams
- Squid
- Fish broth - 500 ml
- Paprika
- 2 tomatoes
- Green peas - 100 g
- Onion
- Lemon
- Arborio rice or other short-grain rice
- 3 large garlic cloves
- Cabanossi Sausage (or any other smoked one)
- Olive oil
- Sweet paprika
- Saffron
- Salt & pepper
- Parsley

Preparation:

* Cut squid into small cubes;

* cut all the vegetables and sausage;

* put a lug of olive oil into a paella pan on a medium heat and fry squid for about 2 mins and take it out of the pan;

* then fry onion and garlic until slightly golden;

* add paprika and fry for another 5 min;

* add sausage and fry all together for 3 min;

* add tomatoes, sweet paprika, salt and pepper and fry for another 5 min;

* put squid back to the pan and add green peas and fry all together for 2-3 min;

* pour in fish broth and add saffron and gently mix all together;

* then fold in the rice and distribute it evenly and bring to a boil;

* now add the seafood, pushing it into the rice a little then cover with lid and cook on low heat for 20 minutes;

* turn off the heat and garnish with parsley;

* serve this wonderful paella with slices of lemon;

How many cups or lb of rice? You did not provide it. You provided it for all ingredients besides rice. Please provide it.

How to Paella CORRECTLY:

Senia rice
Vole or Eel or Duck (depends on season/availability)
Rosemary fed Xonetes
Ferraura, Garrofo or Artichokes (depends on season/availability)
Saffron
Salt
Olive Oil
Water

Note: anything else added would be HERESY
(Rabbit and Chicken are for filthy tourists only)

Must only be cooked on open fire with Orange wood as fuel and as an aromatic or else it's heresy

It's pronounced pah•EHL•yah and not pa•EY•yah

Paella Recipe CHORIZO NO-NO- NO !!!
Being "hard pressed" to find CHORIZO in paella is an understatement. Literally none has ever used CHORIZO in paella, just because the instant the CHORIZO touches the rice it is no longer paella (You cooking Mexican Paella not Spanish)Jami Oliver have DEATHS treat.
