In Epilog you can find the same white Arabic horse at the same place of snow region for free. She is the best horse in game. Also all places with bars of gold are reset at epilog so you can fins them on same pleces plaing by John.

I think they may have fixed this bug. I tried this in Saint Denis, valentine, and strawberry stable, and the gates couldn’t be opened to let the horse out.
