Just because a canning jar seals doesn't mean it's safe. Never wonder if a recipe or technique is safe, because sadly, there are a lot of folks sharing canning advice and recipes that are not safe.

I busted my ass last summer growing a ton of vegetables to can and the canning process was so ridiculously difficult to do without cooking whatever was in the jar. You had to choose one or the other. Mushy vegetables or a sealed jar. Can’t do both. I decided to give up and when the hard times come I’m just gonna hit the off switch. If I can’t even figure out canning then I’m probably not gonna make it far when thing s get tough. I guess it’s survival of the fittest and I’m not meant to stick around if canning is part of the staying alive.

I've never been afraid of canning until a few weeks ago when I bought a steam canner. I have unsealed jars in each batch and just am not confident that it works. Hopefully your class will address steam canners.

I made your mustard pickles tonight. They turned out really liquid'ish. It was thicker when I put it in the jar. Any ideas what I did wrong?
