Chicken Veloute recipe

📜 Ingredients for 4 servings
200g (7 oz) chicken breasts
1l (33 fl oz) chicken broth
2 carrots
2 celery stalks
4 broccoli roses
3 garlic cloves
2 onions
2 tbsp (1 oz) butter
1 tbsp (0.5 oz) flour
50ml (1.7 fl oz) cream
1 handful parsley
salt, pepper
Cut the vegetables and chicken breasts as you like.
In a pan over high heat, sear the chicken on 1 tbsp of butter. Add the vegetables except broccoli and let caramelize slightly.
Pour in the broth and let simmer for 20 minutes.
Mix flour and 1 tbsp (0.5 oz) butter to make a roux. Let cool.
Add the cooled roux to the liquid to make a thick creamy sauce. Turn of the heat, add salt, pepper, pour in the cream and add the broccoli.
Serve and sprinkle with minced parsley.
