Disturbing History of Minecraft Endermen

Throughout all major lore interpretations of Minecraft, the endermen are always a big piece of the puzzle. But I don't think we actually have a concrete idea of what these things really are. Enderman are the key to solving Minecraft's biggest mystery, and today, using the elusive endermite we find out their secrets. I hope you enjoy.

I'm fully in board with the idea of endermite parasitism, but I always thought the endermen didn't want the players looking at them in the eyes because it's a pride thing. Endermen just don't want another builder seeing what they became. Endermen don't attack when they look at the player themselves. Only when we look at them. Even if their backs are turned, they can tell we saw them.

Something you could add on to the end theory is the chorus fruit.
Chorus fruit have always baffled me for a long time, like how did they even get there?
Well, if you're observant, you may notice that in end cities, some of the loot in chests are beetroot seeds. Maybe chorus fruit used to be beetroot and over time evolved into what it is now.

Shulker theory: they’re a chorus fruit powered automaton gone wrong.Edit: Evermore proving my theory, the inside of a shulker when splashed with invisibility still shows, which means that they are in someway, immune to magic.

Theory
When u throw an ender pearl, it cracks. This gives a chance for the endermite to escape when thrown. However, the crack does not always appear where the endermite is so this only makes it a low chance for then to spawn when throwing the ender pearl

The way I see Endermen and The End dimension is like this: Endermen are a highly advanced race of aliens that created the original "interface" hinted at in the End Poem: A Matrix-like program designed to provide an interface for the player (you) to interact with the universe. The original interface is Minecraft, but the current interface is the real world (which the two Endermen call "the long dream"). Endermen are so evolved such that their species has peaked (or "reached the highest level" as the end poem puts it), so they find purpose in observing other lesser beings, such as the player. They're also incredibly adamant about non-intervention, which is why they become hostile when the player makes eye contact with them. It is a largely boring existence, but sometimes their creativity gets the better of them and they move a block or two, but there's very little thought put into where to place that block because they lack the spark of life/creativity that endures within the player. Compared to them, we are still innocent. Still naive in our limited understanding of the universe that we haven't yet lost the drive to build. To create. Something they lost aeons ago. So they simply watch you, the player, to see how you progress.

As for The End, It's not a dimension per-se, but a time. The end is, quite literally, the end of everything. It's a time and place (the center of the universe, maybe?) where the last conglomation of matter endures before the inevitable heat-death of everything. I'm not sure why there's gravity that pulls you into the void, but my best guess is that the end islands are suspended above a hypermassive black hole, so the end is not just heat death, but also a slow, big, crunch.

It doesn't cover everything, but that's my take.

I think that another one of the reasons the builders left for the ancient cities and strongholds was that there was a pandemic or some sort of plague and zombies in the overworld are victims of this (along with the wither etc.) But maybe this parasitic infection was this plague so builders turned to infected humans - either died and became zombies, or survived and became endermen which teleport dimensions to absorb the pearliness out of the infected who haven't yet transitioned. Endermen in the end could be refugees going there and then becoming endermen anyway or just those who transported the dimensions, bringing endermites with them.
