The original white enderman looks like a bug that can happen with texture packs where the game mistakenly ignores the alpha values on the enderman eye glow texture, causing the whole thing to glow white.

I did some research into this myself. The white Enderman is a texture bug and can be replicated by using an invalid texture pack. This actually also happens with white spiders, so researching "Minecraft white spiders" will give you a lot more results into this (most of what you get with the Enderman is creepypasta).

If you look at bug reports in forums that provide screenshots, the bugged Enderman directly resembles the one in the video with the server with the greyish white and purple eyes. The reason I saw given and what sounds the most likely is it happens with those two mobs specifically because of the eye glow effect using a different texture file. Both of those mobs are also affected by the glitch of appearing all white in fog.

It might be a bit anti-climactic too, but the white Enderman is technically real and unintentional, it just involves a texture pack not working. Though I think the white spider that results from this glitch is very cool.

Honestly, Mojang should just add the white enderman without announcing it and make it ultra rare to the point where you won't really find it but there still is a sliver of an chance were you would find it

The white enderman was actually quite common when using custom texture packs in beta 1.8, same glitch could happen with spiders as well, as they both have an alpha on top of their normal texture for the glowing eyes effect. I'm not sure if it wasn't an McPatcher issue, I remember trying to play with the Faithful 32x32 texture pack (which I couldn't live without at the time), but I kept running into white spiders and endermen, it was driving me nuts.

Funny seeing a simple bug turn into an urban legend some 13 years later.

There is the fact that enderman was actually a long black skinny zombie back in the older versions which explains it burning in the video and in early stages of development, it had green eyes rather than those purples

Correction: the white enderman was not specifically supposed to be the farlander. The end dimension was first called the farlands and the enderman was supposed to be the farlander because they inhabitated the end

honestly next to the white enderman discovery the coolest thing about this is that playing on such an old version really made me feel like I used to first playing all those years ago, and that everyone on the server truly lived up to the nostalgia; the Herobrine summoning statue, the disorganised massive builds, the cobblestone home interior, the crappy camera quality and the fact that it was all done to hunt down an old rumour was the cherry on top.

That was no white enderman, that was a directly modified game file

The original encounter had what your "white enderman" lacked, which were those two distinct details (The reason why the eyes don't change colors is because both Spiders and Enderman have "Layered textures" for eyes, which attributes to their slight glow)

What I think happens is that the bottom layer of the enderman's texture glitches out or is unreadable in some way (Attributing to the Opaque mouth texture and the purple eyes being untouched in the original encounter)

Or, perhaps, the most notable explanation: The original encounter was someone deciding to troll the internet :>
