This is my Mother's famous recipe for SPAM Fried Rice! This is one of my favorite dishes as a kid! She would make the Spam extra crispy, which gives the dish amazing texture! Do not under estimate the deliciousness of this dish, it is simple, but extremely fragrant and JAM-PACKED with flavor! Whenever my Mother made this for us, it was a Special Day! Even now, when I eat my Mother's famous SPAM fried rice, it brings back joyful memories!!! Try this recipe and let me know in the comments how you like it.

Ingredients:
3 tbsp canola oil
1 1/2 cups spam ( diced into small cubes )
2 cloves garlic ( minced )
1/4 cup onion ( chopped )
1/4 cup frozen sweet peas
1/4 cup frozen sweet corn
1/4 cup carrots ( diced into small cubes )
salt and pepper ( to taste )
3 egg whites + 1 tsp turmeric powder ( mixed )
3 cups leftover rice
1/4 cup mushroom ( chopped )
spring onions
*roasted black sesame seeds ( optional )
