INGREDIENTS for the Berta Jay's
VEGAN CARROT CAKE OVERNIGHT OATS
-------------------------------------------------------------------
1 cup rolled oats
¼ cup shredded carrots
2 tablespoons broken/chopped nuts (I used 1 tablespoon each of walnuts and pecans; you could use all of one or the other)
2 tablespoons of raisins
20 scrapes of nutmeg
½ teaspoon cinnamon
1 3/4 cups plant milk (I used my homemade almond milk)
2 tablespoons maple syrup
3/4 teaspoon vanilla

My objective for this channel is to share with others what I have learned over the last 30+ years about living and eating healthier. I share my knowledge with my small circle of friends all the time. I am not a doctor, nor do I hold any type of medical degree, but I believe that my tried experiences may help someone else.

For over 30 years I have used every diet imaginable to lose weight, but I confess that I am now at home using the vegan lifestyle. I want to share what I have learned about eating and enjoying food. And, since I am still learning how to be more consistent with this lifestyle, I have decided to eat more healthily, realizing the weight will come off eventually. Though I have not reached my goal weight, I know that sharing with other people in front of a camera with help me to stay on course.

I have, with the help of my husband of 37 years, raised 3 grown children. I will also share some cooking shortcuts as well as some natural formulas I have used and still use for everyday problems.

Great recipe! I had some roasted maple-glazed carrots in the freezer & grated those, they were so sweet I didn’t need to add any additional maple syrup. Delicious warm!

I’m so excited to try this recipe because I am allergic to eggs and wheat so I haven’t had a real carrot cake in a while and I currently have a lot of carrots in my refrigerator. I love your videos!

Yumm...I love oatmeal; will def try this! I make a savory curry oatmeal. (I might be repeating myself.) I make a single serve, and microwave it. It's oats, water, green peppers, onions, jalapenos, curry powder, lemon juice, garlic, black pepper, and salt. Once it's cooked I poke some cheese just below the surface (you want to find pockets of cheese, so don't stir or blend it). Top with dabs of butter (you want it to pool), and drizzle w/ a bit of cream; add a bit more black pepper. For a single serve I use 30 grams of oats and 6 ounces of water; everything else is to taste and your preference.

Yesterday I had a sweet tooth and did oats, water, orange flavored cranberries, coconut and walnuts and a dash of salt. Once it was cooked I added some butter, a drizzle of heavy cream and sprinkled it with Dutch cocoa powder. It truly was decadent.


P.S. Isn't fresh nutmeg lovely? I make an eggnog coffee creamer and it has lots of nutmeg in it...plus some rum flavoring, butter flavoring and some other things.. I don't like my hot coffee sweet, hence I make my own flavored creamers. Fun but the only one I feel I've perfected is the eggnog flavor. I tried a 'fruitcake' one...and a birthday cake one...and a strawberry shortcake one (Dunkin Donuts had a Strawberry Shortcake coffee that was to die for..it was only out a couple of years, in the Spring and I was trying to duplicate that flavor) ...haven't been satisfied with any of these...always go back to the eggnog flavor.
