Incorporating all of the wonderful flavours you would expect to find in a classic carrot bake, you only need a few simple ingredients to make it, plus it can easily be made vegan-friendly and gluten-free.
As the name suggests, you can make overnight oats the night before, so you wake up to a fuss-free, nutritious breakfast.
Carrot cake overnight oats recipe (serves 1)
*Quick *Easy *Healthy *Low fat *Low sugar *Meal prep *Child-friendly *Breakfast *Dessert *Cheap
Ingredients:
- 50g any porridge oats.
- 8 tbsp boiling water.
- 2 tbsp any low-fat plain or vanilla yoghurt.
- 2 tbsp grated carrot.
- 2 tbsp sultanas.
- 2 tbsp sweetener.
- 1/2 tsp of cinnamon.
Method:
1. Grate half a carrot.
2. In a bowl pour the oats and hot water in it and stir so it thickens.
3. Once thickened, stir in the yoghurt, carrot, sultanas, sweetener and cinnamon.
4. Pour it into a jar or container, pop a lid on it and leave in the fridge overnight.
5. Eat it as it is or add a splash of milk and a sprinkling of walnuts for a bit of crunch.
