That's one dish that got me promoted to linecook from the dish pit. Consistently made this chip parm for my meal. Both the Sammy and chix parm dinner. The chix parm sautéed, finish it up with garlic and white wine primo. Bossman noticed I could sautee'. Got me out of the pit. Learned it all, started on the pie line. Then worked my way to sautee'. Learned everything from steaks to king crab and we offered catch of the day for customers that brought in their own catch. Some days I miss being a linecook.
