Rachael Ray has a chicken Parm recipe where you use lemon juice as a dredge instead of egg wash. The breadcrumbs don't adhere as well, but the zing from the lemon juice is so good, I don't mind.

Try putting parmesan on the sauce under the mozz. The melted mozz will melt the parm without it getting hard.

The only thing i do different is i let the chicken rest on the wire rack and then sauce and cheese while still on the rack. And then when i plate I don't do sauce on the bottom so that 1 side stays crunchy
