This recipe is as close as you can get to making traditional beef barbacoa at home. The beef is seasoned with from-scratch adobo sauce, wrapped in banana leaves then slowly cooked until perfectly tender. Lamb or goat can be used in place of beef. Traditionally barbacoa is cooked in an underground pit, but at home, a Dutch oven can be used to prepare smaller batches and simulate the environment.

Banana Leaves, 3 or 4 2 foot pieces (about 61cm each)
Avocado Leaves, 6 each

Brown Chipotle Chiles, 2 each
Garlic Cloves, 8 each
Cumin, 1/2 tsp.
Cinnamon, 1/4 tsp.

Ground Cloves, a pinch

forgive me for my ignorance but i have never used peppers like that before and want to, so I must ask this, when you needed more liquid and added water, why not use the liquid that you used to hydrate the peppers and bring them back? why not use that liquid over fresh water?
