Super Light Lemon Sponge Cake

This Lemon Sponge Cake is super light, sweet and moist. Infused with fresh lemons, it has a tangy lemon flavor.
Lemon Sponge Cake
Ingredients:
2 large lemons
4 eggs (medium size)
100g sugar
90g plain flour
½ tsp baking powder
40ml corn oil
70ml lemon juice
1 tbsp lemon zest

Baking Temperature: 150°C
Baking Time : 60 minutes
Round Baking Pan: 18cm in diameter

Every oven works differently. Baking time may vary

Tips: Gently insert a toothpick in the centre of the cake. If it comes out clean, the cake is ready.

I tried this today and it went so good on the first try! I baked it on a normal round pan at 150C for 1 hour since I don’t have the tube pan and it still came out fluffy and the texture is almost melt-in-your-mouth! Would definitely save this recipe ❤️

We usually don't get lemon here...can we use lime .If so how much of lime can we substitute coresspondinly.
Think lime is stronger in flavour...don't know

Can I make this cake in conventional oven ?if so what temperature I should use for water bath.Usually I bake my cake in 180 degree.Kindly guide me

does anyone know what the baking time would be if I made this in a muffin tray? thanks

edit: the answer is 11 minutes in the same temperature oven. also, use muffin liners (the little paper cup things) instead of greasing the muffin tray, that way the sides won't be brown. as for the water bath, just fill one of the spots on the muffin tray with warm water and fill the rest around it with batter. that way, there is still steam in the oven! :)

I made this cake today and it was overwhelmingly lemony and oily however, I’m going to make it again replacing the oil with butter and using just one lemon. I also had to turn down oven temperature to 140* for fan assisted. Will let you know results when I have baked it.
