Darth Vader's struggles in the first few years of becoming Vader led him to question his actions. What if that line of questioning brought him to cloning his wife? Would he be able to clone her successfully and get what he wanted? Or would his efforts be in vain for someone who only resembled the appearance of Padme Amidala?

More likely Palpatine would had cloned her to secretly torture her behind Vader's back. In the legends novels, Luke was called by researchers to check out an unsealed Carbonite block inside the dungeon of the dead Emperor's palace. It was stated that it was Padme Amidala Skywalker. It was hinted that she was force sensitive and had somehow escaped from Carbonite after the Emperor had died. Luke followed her trail until the Crystal Star novel and then can't find any trace of her after that. Most likely Palpy made clones of her that has an expiration date on it and intentionally allowed her to escape the carbonite just to give her hope and then torture&kill her again. She'd be cloned again and put in Carbonite again too. All of this being behind Vaders' back knowing how he missed&loved her. Anyway it's likely that since she was pregnant with twins that are the most powerful in the force, she'd have some leftover midi-chlorian in her when she died making her a bit Force sensitive.

I think giving Darth Vader a spin on his look and fighting style would be different, but he would be more of a monster than before.
