Originally from So Cal and raised around and w Mexicans and my beloved stepmom was full blooded Mexican- yep you’re right in that your enchilada’s are not the real deal BUT as a “ Tex-mex” recipe it absolutely ROCKS!!!! You go girl !!!

I now know what I'm making the family tonight! I'll sprinkle on some sliced black olives and chopped green onion tops to the top of this as soon as it comes out of the oven, then let it 'rest' for about 5 - 10 minutes before smashing the dinner bell. Thank You, Love!

I like the steam-bake idea for the chicken AND the cream cheese addition. I still make the sauce myself because what we have at the store is crap.

HOT DAMN!! These seriously look MOUTHWATERING!! And I am making the mistake of watching it while I am hungry as HE##!! I also agree with you that the flour tortillas hold up better and frankly I like their taste best. I will without a doubt be making this recipe this week and make enough to have leftovers. This was delicious! I made a double batch, and froze one. When I thaw and bake the 2nd one I’m going to sprinkle the top with black olive slices.

Flour tortillas are always my # 1 choice. I'd add some smoked paprika somewhere in there (my favorite secret ingredient).

In my Mexican kitchen, we'd call that a wet burrito. For enchiladas, corn tortillas add so much more flavor, if prepped properly.

Hands down the most creative chicken enchilada recipe here on YouTube. 💯

I still grimace when I hear flour tortillas are being used where corn traditionally is utilized, but perhaps I need to finally try it for myself, which I will, for the first time, soon.
However, I will plan to roast the poblano Chile and bell pepper first.
Maybe add some bacon grease to the beans, and some tomato paste to the onion, pepper, & poblano chili saute.

Btw--love this chic, her southern draw, and relaxed attitude around food; reminds me of my Texas
