I just got a set of Hexclad and followed the instructions in the box, similar to your explanation. After I took off the heat, I wiped the oil out w a paper towel and there was all this gray dark stuff on the paper towel. Is that normal?? I think I'll wash again and season again and see what happens.

To the best of my understanding, olive oil is a low heat oil. It brakes down when applying high heat therefore it smokes. When seasoning a pan you might find it best to use a high heat oil as it does not brake down when high heat heated. If you season your cookware with low heat oil once you use high heat it degrades the seasoning therefore you will have to re-season more often.

How often are you supposed to season the pan/s over time? Should you do it every few months?

What about coconut oil? It's a solid at room temp I think it's supposed to have a high heat tolerance

Another BIG TIP on HOW to wash your non stick DON"T use hot water to wash them and never soak them in hot water. That removes your seasoning and you have to do that over again. If it's been seasoned properly, wash the pan with warm, not hot water. Warm as in bathing a baby bath water warm. I made a mistake in soaking my pans with hot water once food started to stick on them, I was just aggravating my problem. If you must soak, use cool water. It will retain some of your seasoning, but season again to be sure. I bet these guys didn't know this either. HOW to wash your pans.
