The best blend is Fontina val d'aosta, Gorgonzola Dolce, Tallegio and Parmigiano Reggiano. It’s delicious, entirely Italian, but stays creamy more easily.

Gorgonzola and Roquefort are mot really alike. Since gorgonzola is made from cow's milk and Roquefort is made from sheep's milk!
Also taleggio and brie is nothing alike.. Morbier and taleggio is more alike ;)

Also, Gruyere is tastier then Emmental ;)

My family is from the Dolomites, polenta country. Every other Sunday we'd have a cheesy polenta with a stewed chicken in a peppery onion broth-gravy. The polenta was on a wooden board and cut with a string. So good with the gravy!

The magazine La Cucina Italiana once contained a recipe for gnocchi with Brussels sprouts in a four cheese sauce. I made it several times, it was really yummie!

There was a very nondescript restaurant in Toronto that made a Quattro formaggi grilled cheese with garlic-rubbed sourdough sliced thick with a crust of melted parm on the outside. I still dream of that sandwich.
