Vegan Pho Recipe

8 cups Veggie Broth
1 large Onion, quartered
1 head Garlic, broken into cloves
1-2 inches Ginger, cut into chunks
3-4 whole Star Anise
1 Cinnamon Stick
2 Bay Leaves
1 Tsp Fennel Seeds
6 Black Peppercorns
1/4 cup Soy Sauce
1/2 bunch Cilantro
Rice or Bean Vermicelli or other thin noodle

Optional Toppings

Mushrooms
Baby Bok Choy
Bean Sprouts
Sriracha
Hoisin Sauce
Cilantro

In a stockpot over medium-high heat cook onions, ginger, and garlic until browning, fragrant, and slightly softened; about 2-3 minutes. Add in the spices (the next 5 ingredients) and saute until fragrant; about 30-60 seconds. Add in broth, cilantro, and soy sauce. Turn heat up to high and bring broth to a boil then turn heat down to medium-low, cover and let simmer for 1-2 hours.
Once broth is done, strain in and discard vegetables and spices. Keep broth warm on stove. Place noodles in a separate bowl. Boil water and pour over noodles to soften. Let them sit for 2-3 minutes until noodles are soft. Pour broth over noodles and add toppings as desired.
Note; If you want mushrooms and/or bok choy place a skillet on medium heat. Add in 1 tsp sesame oil. Once heated, add in bok choy and saute until slightly softened then add mushrooms and cook through.
