Soup season is finally here & it’s time to stock up on some flavourful & nutrient rich Veggie Stock 🥬🫙
Use this versatile Veggie Stock recipe to enhance the flavour of your Soups, Sauces, Dals & even Rice or noodle dishes 🍲♥️
Here’s how you make this stock at home☺️
Ingredients :
Onion - 2 medium (roughly chopped)
Carrot - 2 medium (roughly chopped)
Celery - 4 Stalks (roughly chopped)
Bay leaf - 3 nos
Peppercorn - 10 to 12 nos
Shiitake Mushrooms/ Button Mushrooms - 1/2 Cup (roughly chopped)
Garlic - 5 to 6 Cloves (peeled & whole)
Water - 6 Cups /1.5L (You can upto 2-2.5 Litres as well)
Oil - 1 tablespoon
Salt - a generous sprinkle
Add coriander stems for extra flavour!
Process :
• To a large stockpot - add in some oil & sauté the onion & garlic for a couple of minutes
• To it, add the carrots, celery stalks, mushrooms & sauté them for 2-3 minutes
• Add in the water, bay leaves, peppercorns, a generous sprinkle of salt & give it all a stir
• Let it boil for 3-4 minutes & then reduce the flame, cover the stockpot & let the stock simmer for atleast 45-50 minutes (You can let the stock simmer for upto 2 hours as well)
• Allow the stock to cool down, strain it & store it in a clean, airtight jar/ bottle/container🫙
• You can refrigerate your veggie stock for a few weeks or freeze it for a few months - make sure the jar/ container is clean!
• Use it in place of water in literally any dish to amp up the flavour😻
