If you just want chopped ginger, blitz it in a processor the add the to a cold water bath all the skin will float to the top and just skim it then drain.

Little suggestion, your vids are looking a bit “brown out” exposure wise, not sure if that’s intentional but I prefer darker lighting

That is the same technique I used, i learned to peel with spoon, it was faster. Then the second. Now I simply use a potato peeler. But I don't feel any love cutting the ginger, as much as cutting onion. Watching this video make me feel want to go back to the knife technique.
