Lance is the Jack Black in School of Rock of coffee. So enthusiastic and makes the learning so much more enjoyable, I probably could have sat here for hours listening to him talk and make espresso. Keen to see more!

I paid $300 for a class about dialing in espresso, and this video explains exactly the same and even goes beyond what I learned in that class. Lance, you are the best.

make this a series, Lance! It's SO helpful to see the logic and train of thought as you go through it for this particular situation. Having you go through this with different coffees will be a blessing to learn the nuances in techniques! And you could even expand it to include pourovers. Could be very entertaining watching from quality roasts all the way up to that royalty-tier they use in competitions. I'd watch that forever

Lance can beatbox, sing, and is a crazy good barista. What a talented lad.

New home baristas are so lucky to have resources like this to learn from. 10 years ago alot of the myths Lance busts in this video were prevalent on the forums and YouTube. Coffee knowledge has come so far since then and Lance is great at its communication.

This was fantastic. I love how you just did the bare minimums, what most of us started when we first got into espresso. No WDT, no sifting, just tapping, tamp, measure and go. This would make a great series!! Dialing in random coffees

This is a great video for people who are hung up on the 1:2 in 25-30s. I learned that guide and thought it was a rule for the longest time, but experimenting around that has brought me much better espresso. Nice video man!

Appreciate you including the bit about using different ratios for different roasts! I had a light roast that I really wasn't enjoying, and a 1:2.5 extraction was a complete game changer!

Another important thing: when dialing in a lot of shots, don’t be afraid to spit them out. You can accidentally have way to much caffeine really fast if you don’t.

Thanks for not being the usual boring coffee snob putting me to sleep. Educational and entertaining!

I recently invested in a high-end coffee machine, but my initial attempts at brewing the perfect cup were less than successful. However, your videos have been a game-changer for me! You have a fantastic way of explaining things, making the learning process both enjoyable and informative. I really appreciate it – thank you!

Might be my favourite video of yours so far. Gcp, 9 bar spring and allll of your temp surfing /poor man's preinfusion techniques.

The improvement in quality of delivery in your videos is really noticeable and I'm both impressed and really happy for you.

Happy new year!

Just wanna give a shout to you!
Out of all the Coffee experts on YT.. You my friend are the most down to earth and enjoyable to watch! Your opinions are at a human level, and not trying turn everyone into a coffee perfectionist advising to buy the most expensive machines and gear out there..
Honestly Thanks!

Nailed it, Lance. This is definitely the skill new baristas struggle with the most (although the focus the most on Latte Art). I think you did a great job walking them through the mindset.

Thank you for the grinding tips. I know now to check for grittiness and fingerprints. This is the first time I have seen this done. I will definitely use this method!
