Today I am throwing and EPIC BBQ party with several different types of meats, including Japanese Wagyu A5 new york strip, bone in ribeye steak, dry-aged steaks, t-bone steaks, sausages and most important a latin style pig roast in the world famous caja china roasting box. This part was amazing and we had a good old time with friends and family. Thank you for an amazing 2018 and I look forward to 2019!

HOW TO ROAST A PIG LATIN STYLE
I roast it for @ (375°F / 195°C) until ham temp is (185°F / 85°C)
* Guga's MOJO Sauce *
15 cloves garlic, minced
1 teaspoons ground cumin
2 cup sour orange (you can use regular orange)
1/2 cup lime juice
1/4 cup extra-virgin olive oil
1 orange, zested
1 lime, zested
1 tbsp granulated sugar
1/2 red bell pepper
Salt and freshly ground black pepper to taste (I use 2 tbsp of salt and 2 of black pepper)
* Allow this Mojo Sauce to sit in your fridge for at least a week, it tastes better! Mine has been on my fridge for over a month.
* All Meat used is from Grand Western Steaks
