I love cashew “cheese”/sauce, but I will say that if you’re not mixing it into another sauce like this it will get clumpy once cold and doesn’t retain its creaminess the next day. Again, this is only if you’re solely using it by itself.

I’ve heard this works best with “raw” cashews. Meaning the cashews are cooked by steaming rather than roasting. Looks good!

We, in Odisha (India), use cashew + coconut paste to make gravies thicker and milder. Especially in curries having seasonal vegetables
