You mentioned citric acid as the emulsifier. I don’t have sodium citrate but I do have citric acid. Do I use sodium bicarbonate to convert it into sodium cirtrate or will cirtic acid work?

I’m giving this try and was happy to see this wasn’t another flour and butter roux recipe- I know this is going to be a silly question, but why water and not milk?

I have made cheese sauce before I uses milk not water.
No extra sodium citrate

By cooking regular cheese with sodium citrate you're basically making Velveeta.
So why not just use that or another 'processed' cheesefood.

Please stop putting Sriracha in everything. It's disgusting and doesn't belong in everything. Same with the excessive use of plastic cheese.
