We're back on the sauce this week with this incredible Indian curry sauce. This one is vegetable based so its a great way to increase how many hidden vegetables you can squeeze into your dinner. It yields more than enough for 2 days worth of dinners too! It's really delicious and easy to make once you have your veg roasted! Let us know in the comments what you think.

That looks so good. I fooled myself into thinking I could smell it.
For folks needing less or oil free meaning can't use that coconut cream- I saw ann and jane esselstyn give a tip for A good way to get coconut cream without the creamy fat- a teaspoon of coconut extract into some oatmilk or plant milk of choice.

I feel like you guys are kings of curry! I love how easy this is, and you are absolutely right. Spices and herbs are so super cheap. Especially if you have a bulk store that you can bring in your own containers.

This looks wonderful ! Great idea to use the roasted veggies . Thinking about using light coconut milk, but also - can I freeze it? It would be great to have curry sauce ready to go in portions in the freezer.

Looks wonderful and I can only imagine how incredible it smells! You mentioned that some of the spices are fat soluble while stirring them in the pan. Would you get as much flavor without the oil?

I recently discovered the glory of browning Brussels sprouts in the oven with a little oil and seasoning. I may need more roasted vegetables in my life indeed.

Looks fantastic, thanks. Presume the ground almonds went in with the spices off camera? I wasn’t sure as they were kept in a separate little dish..rather than with the desiccated coconut. 🤔

Really like this simple curry. I'd love to see another month of burger in Feb again with different ingredients than last year like sprouts, curry, kombucha squash, cauliflower, millet etc. I still make all of last years burgers. Thanks!!!
