Angelo Teaches His Mom How to Make Boiled Jamaican Dumplings w/ Cornmeal

Ingredients:

-About 4 cups flour
-1 1/2 cups cornmeal
-1 teaspoon salt
-1 1/2 cups water

This takes about 25 minutes to prepare and 15 minutes to boil.

You simply start with about 2 cups of flour, 1 1/2 cups cornmeal, 1 teaspoon of salt, and mix them all together in a bowl. Add 1 1/2 cups water and mix it first with a spoon and then by hand. Keep adding flour as you knead it to dry it out and make it firm. We might have ended up using up to 4 cups of flour total because if you don't get the dough really firm, almost like a catcher's mitt, it doesn't cook well and comes out mushy.

Boil a pot of water. Shape the dumplings into relatively flat circles like biscuits (or whatever shape you want, really, but I don't know why you'd want a different shape), boil them for 15 minutes, and either add them to a soup or let them cool off and eat them the way they are.

Since it's not a Greek recipe my mom was complaining through most of it. It does make your hands tired if you're not used to it. My mom burns her hand several times putting the dumplings in boiling water.

While the dumplings were cooking I went upstairs and filmed the urine filled toilet and complained about it. My mom was complaining at me, too, because she wanted to leave, but she stopped when I told her she had no rush since she was only going to the hospital to visit my dad while he was resting after his biopsy for a few hours. And I was going to drive her.

Thank you, Angelo. I love cooking food from other countries and I've cooked Jamaican Patties before and some other Jamaican recipes but I've never tried these. I'll have to try it. :-) Thanks for sharing.

The texture she had was prefectly fine. It would have come out great! The batch was too firm after you did it that's why it was so hard to roll into the balls and why the shape was inconsistent. No you don't need a ton of flour just. You need less water and gradually add until consistency is doughy. You insisted for her to do it your way which is fine but it's not the right way. Butter or a little cooking oil to the dough or water brings flavor out too. Glad you're trying other foods. But if you keep doing it this way pretty sure you got backed up and constipated afterwards 😂😂😂

But good news the way those came out is pretty good fried in the mornings with breakfast lol😜

Your mom is a trooper and a darling for putting up with your arse😊

next time half the ingredients and gradually add the water don't pour the entire thing. If it feels like a pie dough it's ready let it sit for 5min then shape them and boil them.

I think she just gets frustrated when not knowing how to do something. Not because it isn't Greek (although if it were, she wouldn't mind the difficulty knowing how to do it right).

Jamaican patties were popular when I was in high school. A friend of mine would eat them with mayonnaise.
