Bearnaise Sauce Recipe:
- 250 g of butter
- 4 egg yolks
- 3 shallots finely chopped
- 6 tablespoons of chopped tarragon
- 200 ml of white wine
- 100 ml of tarragon vinegar
- 2 teaspoons of freshly cracked black
- Salt and pepper to season

Again another awesome video. To be honest, I watch Guga, Mad scientist BBQ Smoking Joe's BBQ And a few others and you hands down are more informative and entertaining than them all. Jeremy Yoder gives you the why in BBQ but you do the how in BBQ. Thank you for helping me be better at BBQ.

Traditionally béarnaise is made with chervil and tarragon, and I think chervil really elevates it from a great sauce to the best steak sauce.
I usually make the tarragon only version because chervil is not super easy to source and is super fragile so it doesn't keep for long but if you get the opportunity you ought to try it, it really takes it up a notch and amps up the complexity of the sauce.

I discovered the deliciousness that is grilled broccolini last year at a restaurant that had it as an appetizer; my brother insisted on getting it as I've never had it. I've never seen it or heard of it before then and now it's my favorite side with steaks with some form of potato. I grill it on the kettle and brush it light coat of butter or olive oil and sprinkle a light coat of SPG. *chefs kiss*
