It wasn't the soul stone itself that did that. It was losing Gomora, in fact that was the point. You give up the soul of the one you care about the most so you know the weight of what you are doing. That's why Mantis said, "He mourns!" That's why when Gomora asked him what it cost, he said, "Everything."

When Thanos snapped he got rid of all the good writers that worked on the movies and when the Hulk snapped to bring everyone back he couldn't bring back Black Widow or any of the writers

After thanos had to sacrifice gamora he was just genuinely sad and after that he learned the importance of an individual that’s why he restrained allot more yet he still decided to fulfill his plan bc like he said “the hardest choices require the strongest wills”

Gamora was dead When Thanos came to Confront Strange on TITAN. He learned Maw was dead and said that day extracted a heavy toll.
Meaning those losses had somewhat of an effect on his Fighting Drive. Despite his Will

He also held back quite a lot after acquiring the Soul Stone, choosing not to kill his opponents after, for example Captan America, when Cap was holding back his gauntlet he was genuely shocked that there was someone strong enough to hold down his hand like that which in turn he needed more force to knock out Cap while keeping him alive

The "let him have his fun" wasn't aimed at thanos he was belittling hulk .
