Excellent video! Quickly got to the point with very clear instruction and visuals in no time at all! I used your video to shape the first loaf of homemade sourdough I ever made a few weeks ago and it turned out to be as good (maybe even better than) the stores in CA! Late to the party here, but this video has totally transformed my news baking! I've been following a recipe that uses a simple, flatten and roll method for shaping the dough. It generally works, but it's inconsistent. I think it's due to the seam needing to be at the bottom. But this method is brilliant. Really nicely demonstrated, and easy to follow. Thank you! ❤

I've been doing the bicycle seat shape for a couple years now since seeing this video, and it results in a very nice batard. Probably now better than my boule :)

Thanks for this short but important skill. I’m using Ken Forkish techniques and I happen to have an oval cast iron Dutch oven but all his techniques are for making a round loaf. So I’ve been in need of this. I’ve actually been baking bread since before the pandemic but having trouble now getting flour and yeast. I had to buy a #2 bag of Redstar yeast and am storing it in vacuum seal in my freezer.
I am lucky I happen to have a small batch organic grower who grows whole wheat, spelt, triticale and rye milling them in small batches.
