Recently made a career change and started working at a pastry shop after 10 years working in front of a computer, and by far the biggest challenge has been the amount of hours standing on my poor feet and legs. The first 2 weeks were so intense, like daily cramps, sore everything and wondering if I made the right choice but it's been two months now and my body has gotten more used to it, but yeah, working in kitchens? Way harder than I ever imagined.

As you said, the fact that the student present at the course WANT to be there, it makes a huge difference in everything. The feeling, the camaraderie and the will of everyone to learn is truly motivating and gives you strenght for the day. I really like to see you enjoying your trip here in France. It makes me so happy to see you living the life I dream of! I'm 17 and have always wanted to learn pastry, attending culinary school would bring me so much joy. I also love bread and I really appreciate your excited documentation of the whole process, baking baguettes must be soooo satisfying. I have been watching your videos for a while now and I am just so glad that you're doing this and we get to live vicariously through you!
